3 ½ - 4 lb Pork tenderloin
2 6" x 12" Sugar Maple Oval Planks,either rectangle or oval, soaked
1 small Apple, sliced into thin wedges
12 - 14 Strips of Bacon, long enough to wrap around loin
4 Tbsp Brown Sugar
½ Tsp Cayenne Pepper
1 Tsp Smoked Paprika
Maple Syrup, Granulated Garlic, Black Pepper for Drizzle
Heat oven to 350°Soak Maple plank in water for at least 2 hours. Put side by side on cookie sheet or broiler pan and set aside. In small bowl mix brown sugar, cayenne pepper, and smoked paprika. Pat pork loin dry with paper towel then place on planks. Rub mixture into both sides of pork loin and place across planks to fit (we put ours diagonally). Place apple sliced on top of loin. Wrap bacon over the loin and secure with tooth picks. Place in center of oven.
Cook for approximately 1hr 15min or until meat thermometer reads 140°. Remove from oven and drizzle with maple syrup, granulated garlic, black pepper. Return to oven and cook until meat thermometer reads 165°. Remove from oven and let rest for at least 10 minutes.
Serve with green beans and a side of roasted butternut squash for a perfect fall meal.
